Monday Pasta Nights Launch April 8
MONDAY, APRIL 8, TROUTBECK DEBUTS PASTA NIGHT, A PLENTIFUL FAMILY AFFAIR WITH ANTIPASTI, BREAD, SALAD, A CHOICE OF PASTA, + DESSERT — $45++ ($25++ FOR CHILDREN) — EVERY MONDAY NIGHT
Did you know that Chef Vinny Gilberti and team make all of our pastas from scratch, in house? Well they do! Starting April 8, it's time to dive into the comforting pleasure of fresh pasta, sourced with the best of what's available in our region, every Monday night.

Pasta Night Mondays, a weekly dining event offering a 3-course prix fixe meal of antipasti, “bread” baked in house, and a plentiful family style salad; a choice of house-made fresh pastas; and dessert, for $45 per person and $25 for children (plus tax and gratuity). All pastas — from cavatelli to ravioli, tagliarini to tajarin — are made in-house by Italian American Executive Chef Vinny Gilberti and team using locally grown and milled grains from Wild Hive Farm in Clinton Corners, NY, and Hudson Valley sunflower flour, and combining seasonal ingredients, often sourced from very near by.
Pasta Night at Troutbeck is an opportunity for Chef Vinny to embrace his Italian roots, his appreciation for making pasta from scratch, and a weekly chance for community to gather at Troutbeck on Mondays, when few restaurants in our area are open.
Sample Menu
First Course:
• Antipasti — Pickled veg, marinated Castelvetrano olives with orange zest + thyme, cured meats, such as finnocciona from Jacuterie (Pine Plains, NY)
• Bread — House-baked rosemary focaccia with whipped ricotta, or flatbread with speck, Thistle Pass Farm (Millerton, NY) arugula flowers
• Salad — Plentiful salad of young lettuces, blanched seasonal veg, such as Hakurei turnips or asparagus, Fox Trot Farm pea shoots, and Thistle Pass edible flowers
Main Course:
Choice of Pasta — Diners will choose their own pasta dish with a vegetarian, pescatarian, and meat option, each week, such as:
• Spelt Ricotta Cavatelli, local mushrooms, ramps, English peas
• Saffron Tagliarini, clams, preserved chilis, basil
• Garganelli, Rabbit Ragout, Rascal McGrath cheese
Dessert:
• Tiramisu by Pastry Chef Emma Isakoff, served family-style
Children will have the option of more simplified pasta dishes, still with fresh, housemade pasta from local grains. Dairy and gluten-free options will be available by request.
Monday Pasta Nights will be served from 5:30 to 9pm, every Monday.
