For Christmas Eve Dinner, Troutbeck will offer our seasonal à la carte Dinner menu — abbreviated slightly, but with options for poultry and meat lovers and vegetarians — and with special dishes inspired by the Feast of the Seven Fishes, below:

Live Scallop Crudo, Black Winter Truffle, Apple
Weir Squid Salad, Preserved Local Chilis
Skate Cheek Fritters, Saffron Aioli
Smoked Steelhead Trout Dip, Trout Roe, Brioche, Buckwheat Blini
Tajarin, Maine Uni, Lemon, Basil
Roasted Lobster, Coral Sauce, Peter Wilcox Potato, Brussels Sprouts
Savory "Fish Waffle" Brandade
Cookies (shaped like fish, of course) with Local Milk
